My friend and I loved staying at Hamilton House for our big birthday weekend in Bruges. The house is a beautiful and relaxing environment, everything you might need is provided, and Raphael was easy to contact.
The location is very good too; it's only about a 12 minute walk to the Grote Markt, and Jan Van Eyck Plein a few minutes walk away has some really nice cafes and restaurants (book for breakfast at weekends though - we struggled to get a table everywhere and didn't even get to the Blackbird Cafe because it was either fully booked or closed).
Top tips: the no 2 bus to/ from the railway station stops at either end of the street (get the train to Oostende or Blankenberge and you can be at the seaside in half an hour), and the Carrefour Express supermarket around the corner is convenient (although it closes at 7pm and apparently fresh milk is not a thing in Bruges!).
Recommendations: the old and atmospheric Vlissinghe pub just across the canal for its great food and cute dog; Bruges has lots of little hidden almshouses with gardens where you can sit and enjoy a moment of quiet; if you want to buy Belgian chocolate but don't want to spend a fortune on the fancy stuff, the Chocolaterie Jan De Clerck on Academiestraat is a nice little independent sweet shop. Finally, the Choco Story Museum does chocolate-making classes - and you can take home everything you make!
