"We'd definitely recommend The Squirrel's Nest. A lovely house and owners. Our room was great, spacious en suite bathroom, air conditioning which with temperatures of 40 degrees outside (canicule), was really appreciated, tea and coffee making facilities on the landing. On a more quiet street but very walkable to the cathedral, musée de Toulous-Laurtrec, the new walking bridge (very scenic), restaurants and more.
