The boutique distillery’s history began with an appreciation of the pristine natural environment here in Tasmania. The distillery’s founder, Bill Lark, saw the potential in the pure water, highland peat bogs, windswept fields of barley and temperate climate for which Tasmania is renowned and began distilling in 1992, approximately 150 years after the last Tasmanian distillery closed its doors.

Lark Distillery is located on Hobart’s heritage waterfront, between Franklin Wharf and the Elizabeth Street Pier. It is easily accessible by public bus. The bottle shop and whisky bar are open daily. Guided tours depart once a day.
