This is an ube ice cream cookie sandwich, and yes, that purple is completely natural in color. Ube originated in the Philippines and is a form of purple sweet potato. Chadlou's uses Dave's Ice Cream (a local company based in Waimanalo with several locations over the island of O'ahu). You can select whichever type of cookie you'd like from what they have available (we chose chocolate chip) and they make your very own custom ice cream cookie sandwich. Brilliant! Very noisy! The balcony’s are being replaced, which is a year long process, all of 2026, but let me book a room with a balcony which I couldn’t use. I would have stayed somewhere else if I had known.
