In Nagoya, ancient history collides with modern innovation to form a kaleidoscope of colours and this can be experienced in its cuisine, with modern twists being spun on dishes dating back to ancient times. Let your host show you how to eat hitsumabushi (grilled eel on rice) like the locals- there is a special way to do it in Nagoya- or munch on a bowl of miso nikomi (udon-style noodles served in a rich miso broth) at an underground mall. We hope you are not full yet because there is still time to slurp down ramen noodles (it’s good manners, promise) nibble snacks at one of the many izakayas around Nagoya station or drink sake in historic yokocho (alleyways) near Nagoya Castle. And have only began to scratch the surface of Nagoya's food scene. You could spend your life on the never-ending search for that perfect bowl of ramen, which Nagoya has developed into its own spicier version called “Taiwan ramen,” but even with just a few hours your host can’t wait to share a sliver of what’s good with you.
