During the live demonstration, you will discover all the stages of the process:
• Preparation of Primo Sale cheese
You will observe the milk coagulation process and the subsequent pressing that gives rise to a fresh, simple, and authentic cheese.
• Explanation of the curd process
You will learn more about the key moment in the transformation of milk: from coagulation to breaking the curd, including the techniques, times, and tools used in the tradition of cheese making.
• Processing of stretched curd
You will witness the stretching of the curd, a fascinating phase in which the curd is worked with hot water until it becomes elastic and moldable.
• Mozzarella
You will see the manual cutting and shaping of fresh mozzarella, a symbol of Italian food excellence.
• Burratina
You will discover how burratina is made, with its stretched-curd casing that encloses a soft and creamy centre.
The cheesemaker will share interesting facts, anecdotes, and secrets passed down from generation to generation, making each gesture full of history and passion.
