On a guided journey from Chocó to Nariño, diners will sample 5 varieties of viche, accompanied by pairing bites created by the chef, and a narrative from the service and bar team highlighting the historical, cultural, economic, and gastronomic significance of viche in Afro-descendant communities, with whom we share a close relationship and common principles.
Five different varieties of viche have been selected: one each for the departments of Chocó, Valle, and Cauca, and two for Nariño, given that we are in the region. The common narrative thread running through the selected options is the importance of viche in these communities, how its production has historically developed, the purposes and uses of the drink, and the products that accompany it.
During the tasting, diners enjoy 5 viche drinks, with a constant focus on the producers, processors, and production process, with whom we have a close relationship.
Guests are recommended to choose one of the à la carte options as an accompaniment.
