The evening invites a slower pace, a deeper listening to the place, and a moment to be guided by time. This experience is designed to be enjoyed as the light fades and the cellar grows quieter, creating an intimate setting dedicated to the pleasure of the table. In this setting, in the heart of San Gimignano, just steps from the historic centre, the storey of Ava and her handmaids emerges naturally, as part of a narrative that becomes more intimate. Their presence evokes protection, care, and continuity, values that find their deepest expression in the evening meal. The experience unfolds as a complete dinner, where the wines of the collection accompany a cuisine rooted in Tuscan tradition, defined by simple gestures and recognisable flavours. Each course engages in dialogue with the glass, creating a balance of intensity, structure, and harmony. A dinner designed to unfold with the rhythm of the evening, surrounded by authentic flavours and the quiet presence of the cellar.
