Step into the heart of Gjirokastra and immerse yourself in the rich culinary traditions of southern Albania with a hands-on cooking class set in the atmospheric Old Bazaar—a UNESCO World Heritage site full of character and charm. Surrounded by cobblestone alleys and Ottoman-era architecture, you'll join a passionate local chef for an unforgettable culinary adventure steeped in heritage, flavour, and storytelling.
Cook Authentic Gjirokastrian Dishes Passed Down Through Generations
In this interactive cooking workshop, you’ll learn how to prepare two iconic dishes from Gjirokastrian cuisine:
Qifqi, savoury rice balls infused with fresh herbs like mint and oregano, fried in a traditional cast-iron mould unique to the region.
Osa me mish qengji, a comforting and hearty dish of hand-rolled pasta served with tender, slow-cooked lamb, seasoned with local spices that tell the storey of Albania’s mountainous terroir.
To round off your culinary experience, you'll also prepare a seasonal Albanian dessert—perhaps a fruit compote with local honey and nuts, or a traditional sweet like sheqerpare—depending on the time of year and availability of fresh ingredients.
Learn More Than Just Recipes—Discover a Way of Life
As you cook, your host will share the stories behind each dish, revealing how these recipes have been lovingly preserved within families for generations. You’ll explore the symbolism of certain ingredients, the role of food in Albanian hospitality, and how cooking practices have evolved while remaining deeply rooted in tradition.
You'll also get hands-on experience using locally sourced herbs and spices, learning how they’re dried, preserved, and blended to bring out the distinct flavours of Gjirokastra. From the preparation techniques to the rhythm of traditional meals, you'll discover how cooking is woven into the fabric of local life.
A Shared Meal in a Historic Setting
Once your dishes are ready, you’ll gather around the table for a communal meal in a cosy, rustic setting—whether it's an old stone house or a family-run guesthouse tucked within the bazaar. Enjoy your creations alongside local wine or raki, and relish the flavours of southern Albania while chatting with your host and fellow food lovers.
Take the Experience Home
Before you leave, you’ll receive written recipes for everything you prepared, so you can recreate the magic in your own kitchen and share a piece of Gjirokastra with your loved ones. Whether you’re an experienced cook or a curious beginner, this cooking class offers a perfect blend of education, culture, and fun.
Don’t just taste Albania—become part of it through this unforgettable food journey in the heart of one of the country’s most historic towns.
