A tasting of four Portuguese wines with vegan gastronomic pairings is an experience carefully built around the sommelier's vision and sensitivity, where each element — wine and gastronomic proposal — is conceived as part of a coherent and conscious whole.

In this tasting, the sommelier takes on the role of author of a sensory narrative. The selection of the four wines follows a defined logic, creating a journey with rhythm, intention, and coherence. At the same time, the culinary component is developed based on ingredients exclusively of plant origin, emphasising seasonality, the diversity of textures, and the natural richness of flavours. Each moment is planned to relate to the previous one and prepare for the next, allowing for a balanced progression throughout the experience.

The culinary pairing adds depth without resorting to full dishes. Instead, each wine is accompanied by small portions — plant-based creations carefully sized to complement the tasting without overloading it. These small compositions allow for a more focused exploration of pairings, highlighting specific interactions between wine and food, such as acidity, structure, freshness, or plant-based umami.

Each element is designed to enhance the whole: quantities are adjusted to maintain the lightness of the experience, while combinations are designed to create contrast, balance, or continuity. Ingredients such as vegetables, herbs, legumes, mushrooms, fermented foods, or dried fruits are creatively crafted to reveal new possibilities for pairing. The goal is not to satisfy, but rather to stimulate discovery and curiosity at each stage.

More than a meal, it is a guided journey where the sommelier invites participants to explore subtle and intentional connections between wine and plant-based cuisine, building an engaging, progressive, and memorable experience.
