Preparations such as medallions of seitan (a whole-wheat meat substitute) with marsala sauce and mashed potatoes; Moroccan-spiced portobellos with chickpeas, arugula, potatoes, and harissa sauce; and mango-coconut curry keep vegans and their carnivore friends equally satisfied.
