A bastion of authentic Roman cooking since 1911 (the decor has changed very little), this trattoria is the place to go to try rigatoni con pajata (with calves' intestines) -- if you're into this sort of thing. Pasta all'amatriciana and carbonara are also classics. The house wine is a golden nectar from the Castelli Romani.
