Le Passage des Carmagnoles Feeling carnivorous? Search out this friendly spot not far from place de la Bastille in an obscure passage. Though it bills itself as a wine bar, it has a full menu, including the celebrated andouillette sausage of Mr. Artois in the town of Vouvray. The initials AAAAA, by the way, mean the sausage has the stamp of approval from the French andouillette aficionados' association. Since the andouillette's pungent tripey aroma makes it an acquired taste, other, less fragrant dishes are available, such as rabbit with mustard, steak tartare flavored with mint, and game in season.
