The first of brasserie king Jean-Paul Bucher's many Paris addresses is hard to find down its passageway near the Gare de l'Est, but it's worth the effort, as much for its Alsatian rich woods and stained glass as for its brasserie standards (such as sole meunière, steak tartare, and choucroute). Order a carafe of Alsatian wine to go with your meal. It's open until 1:30 AM, with a special late-night menu for EUR21.50 from 10 PM. Métro: Château d'Eau.
