The handsome, contemporary look of this Marais bistro and wine bar is the perfect backdrop for the good traditional fare and excellent Burgundies served by the glass and bottle. Always on the menu are Burgundian classics such as jambon persillé (ham in parsleyed aspic jelly), escargots, and oeufs en meurette (eggs poached in a red-wine sauce); more up-to-date picks include a cèpe mushroom velouté with poached oysters.
