Celebrity chef Charlie Palmer's protégé Dante Boccuzzi is in charge of the kitchen at Palmer's top-rated restaurant. The food is presented as striking architectural constructions, but taste remains paramount. Several distinct flavors work their way into single dishes such as seared scallops and foie gras with port-glazed Bing cherries, or oregano-basted guinea hen with braised chanterelles.
