If it all seems unchanged since the days of Rembrandt, that's because this hotel started out in the 14th century. It's still in business today, its Café Roux, being a main draw. It sports a mural that Karel Appel created early in his career to repay a debt to the city and some of the most stylish French dishes in town, such as a superb flan of scallops with tiger prawns and Roquefort and innovative Pavé of turbot served with a green pea-mint risotto.
